- 1 tablespoon of raw honey (for an extra touch of natural sweetness, adjust to taste)

Steps:
- In a medium-sized mixing bowl, combine all the dry ingredients: the almond flour/meal, tapioca flour, baking powder, and salt. Whisk them together thoroughly to ensure they are well-mixed and evenly distributed.
- In a separate medium bowl, whisk together the wet ingredients: milk, mashed banana, eggs, vanilla extract, and honey. Whisk until the mixture is smooth and well-incorporated, ensuring the banana is fully mashed.
- Gradually add the dry ingredients mixture to the wet ingredients, mixing slowly until just combined. Be careful not to overmix; a few lumps are perfectly fine and often result in a tender pancake.
- Pre-heat a non-stick pan or griddle over medium heat and melt a small amount of butter (or coconut oil) to lightly coat the surface.
- Using a ¼ cup measuring scoop, pour about ¼ cup of batter into the middle of the pan for each pancake. Making them smaller ensures they are easier to manage and flip.
