A part of me holds onto the hope that next year, I might wake up on Christmas morning in a country much closer to home. Perhaps Santa, listening carefully from afar, will grant this heartfelt wish?
Yet, I truly believe that everything unfolds for a reason. My four years in Argentina have been transformative, shaping me into a more resilient and independent individual than I ever imagined possible. For this profound personal growth, I am deeply thankful. And this year, I am especially grateful to spend Christmas with Juan’s wonderful family, embracing their traditions and creating new, precious memories together.
More than any other blessing, I give profound thanks that we get to celebrate Christmas alongside Trini, Juan’s cherished grandmother. She is, without a doubt, one of the strongest and most inspiring women I have ever known, and one of the people I hold dearest in my heart. Ingredients:
1) 2 large red bell peppers, thoroughly seeded and cored
2) 1 medium onion, peeled and quartered
3) 1 small eggplant, trimmed and roughly chopped (about 1 cup)
4) 2 cloves of fresh garlic, peeled
5) 3 tablespoons of high-quality olive oil, plus more for drizzling if needed
6) 1 ½ teaspoons of salt, or to taste
7) ½ teaspoon of freshly ground black pepper, or to taste
8) 1 tablespoon of concentrated tomato paste, for added depth of flavor
9) 6 slices of soft pita bread, for serving
Steps:
1) Pre-heat your oven to 200 degrees Celsius (approximately 400 degrees Fahrenheit), ensuring it’s fully heated before placing vegetables inside.
2) Carefully cut all the vegetables (red bell peppers, onion, eggplant, and garlic) into evenly-sized cubes or pieces. This ensures they roast uniformly.
3) In a large mixing bowl, toss the cubed vegetables generously with the 3 tablespoons of olive oil, salt, and freshly ground black pepper until they are all well-coated.
4) Spread the seasoned vegetables in a single layer on a large baking sheet. Roast them in the pre-heated oven for approximately one hour, making sure to flip them around gently every 20 minutes to achieve even browning and charring.
